Irish champagne cocktail

When to make it: post-work, pre-dinner relaxation.

• Sugar cube
• 5ml Angostura bitters
• Wee dram of decent blended Irish or Scotch whisky
• Flute dry champagne, two-thirds full
• Twist of lemon

If whisky’s not your thing (brute!), drop it and add more champagne instead.

1. Place sugar cube in empty flute and soak with bitters.
2. Add whisky (optional) and champagne.
3. Run lemon round rim of flute, squeeze in and sip.
